Avocado Lime Soup
This is a great soup to have for just about any occasion. What an eye catcher. I would love to serve this at a small dinner party. Just a beautiful presentation from Russell James The Raw Food Chef.
This soup is going into my favorite raw food recipes pile for sure. Russell James is an experienced World Renowned Raw Food Chef. Originally from the UK he is now living in the United States. He has his own Raw Food Home Study Course as well as an Online Version. Russell trained as a kitchen apprentice at the world’s leading raw food culinary arts school – Living Light International. This was just the very beginning to different opportunities that Russell has had in Terms of training in the Raw Food World.
Russell James offers Raw Food Training Classes in the United States and has a Full Home Study Course that he is offering online as well.

3/4 of a medium cucumber
1 stalk celery
Juice of1 lime
Small handful of fresh coriander (cilantro)
2 teaspoons cumin
1 teaspoon ground coriander
1/2 teaspoon salt
1 teaspoon tamari
1 cup water (if wanting warm soup use hot water)
Sour cream and chopped chives to garnish (Vegan-recipe follows)
– Blend all ingredients, except the sour cream and chopped chives in a high-speed blender until smooth.
– Transfer to a serving bowl and garnish with sour cream and chopped chives.
Vegan Sour Cream
1 1/2 cups cashews
2 tablespoons lemon juice
1 tablespoon + 1 teaspoon apple cider vinegar
1 cup water 1/2 teaspoon salt
– Blend all ingredients in a high-speed blender. Add a little extra water one tablespoon at a time if you’re having trouble getting the cashews smooth. – Transfer to a bowl or squeezy bottle keep refrigerated. Will firm up a little in the fridge which makes an excellent dip for crudite.
